What an industrial pasta factory produces in five hours, we make by hand in a year.Pastificio Martelli is a family-run business located in Lari, a small medieval village near Pisa, that has been making pasta using old-style traditions since 1926. Only the best Italian durum wheat semolina, cold water and bronze dyes are used to produce this exceptional artisan pasta.
All the manufacturing process in our pasta factory is done with artisanal techniques at low temperatures. This approach has been abandoned by the industry due to the long waits and the lower yield, but it is essential to enhance the flavour of the grain, great absorption of the sauces and to make the pasta easier to digest.
